Tips to make a pizza sauce.
- Take
tomatoes into a bowl and put them to a boil after adding water into the
bowl. Let them simmer for 3-4 minutes until the skin starts separating.
Peel the skin and keep it aside for making puree.
- Try using ripe tomatoes (preferably San Marzano) to boil, blanch, and make puree for preparing an authentic pizza sauce. It gives the sauce a bright red color and freshness. But you can also take any other red tomatoes if you don’t find the San Marzano tomatoes specifically.
(Note- You can directly make a puree of tomatoes if you’re using canned tomatoes)
- While making
a puree of the tomatoes, just knows how smooth you want your pizza sauce.
If you want your sauce a little chunkier, make sure to set aside some portion of the tomatoes before blending in all. And crush that portion of tomatoes with hands. You can also use the canned tomatoes to add a bit of
crunchiness to the sauce.
- Heat the pan
on low flame and add olive oil and then garlic to cook for 1 minute. Then add tomato puree and cook for 4-5 minutes until it starts simmering. Now add the fresh herbs, sugar, and salt to the pan. Let the sauce cook by covering the lid for the next 30-35 minutes on low heat.
- Once the
tomatoes are mushy, put the dried oregano, chili flakes, black pepper, and balsamic vinegar into the pan. Keep the consistency of the sauce as you desire. If you think it is too thick, add some water to balance it. Let it heat for another 4-5 minutes and let it cool.
- You can
shift it in an air-tight container if you want to store it for longer than
a week.
